This has several reasons: people get bored easily, kids like doing what they are supposed to be doing, and adults enjoy learning what it is like to experience what the kids do on these rides.

Many things require knowledge of chemistry or engineering, both of which aren’t very popular in the public school systems. This attracts a new audience, who wants to experience this type of ride but doesn’t have the money or time to go to an attraction store/rental place and buy something on display.
